From the roasterPROJECT III . RATIBOR HARTMANN Phil & Sebastian | Proud Mary | MAME When our buddies at Phil & Sebastian reached out, asking if we'd like to be part of a special collaborative release - featuring coffee from one of our longest producer relationships - we couldn't help but say yes. Introducing Project III: A celebration of coffee producers, roasters, and the craft that connects them. Behind every remarkable coffee is a producer whose knowledge, curiosity, and dedication have shaped it over years of work. Equally important are the roasters who bring those coffees to life, each with their own philosophy and understanding of how to reveal what’s possible in the cup. It’s a relationship built on a shared pursuit of quality, and one that continues to fascinate us. Project III celebrates both sides of that relationship. Three world-class roasters, each selecting a distinct coffee from the same producer and roasting it to reflect their individual approach. One producer, three perspectives, offering a rare opportunity to explore the depth and diversity of exceptional coffee, and the many decisions that shape it along the way. For this second edition, we turn our attention to Panama and the extraordinary Geishas of Ratibor Hartmann. Phil & Sebastian (Calgary), Proud Mary (Melbourne, Portland, Austin), and MAME (Zurich) have each selected a distinct Geisha lot from Ratibor, roasting it to reflect their individual philosophies and styles. His work is defined by a deep curiosity about what coffee can become, and a willingness to challenge established methods in search of something better. From fermentation to drying, Ratibor has spent years refining his approach, exploring unconventional techniques and studying how even the smallest decisions can transform a coffee’s character. His methods are both meticulous and ambitious, combining careful observation with a willingness to push beyond what is already understood. It’s an approach that has earned him remarkable recognition, including multiple first-place finishes at the prestigious Best of Panama competition, and a Geisha Natural that scored an extraordinary 96.50 points in 2022. The three coffees in this edition offer a fascinating look into the breadth of his work. From the expressive complexity of a Wine Globe Anaerobic Natural to the elegance and clarity of his washed Geishas, each lot reveals a different dimension of Ratibor’s approach. In the hands of three exceptional roasters, those differences become even more compelling. Together, Phil & Sebastian, Proud Mary, and MAME offer three distinct perspectives on the work of one extraordinary producer. The result is a rare comparative experience, revealing how the decisions made at origin, through processing, and ultimately in the roastery can shape remarkably different expressions of Panama Geisha. MAME MAME is a specialty coffee company founded in Zurich in 2016 by World Champion Emi Fukahori and Mathieu Theis, built around a simple idea: coffee should make you curious. From our cafés to our roastery, we search for coffees that surprise us, coffees with remarkable character, clarity and stories worth sharing. We work closely with producers around the world, building relationships that allow us to learn, experiment and continually push what coffee can become. Competition has always been part of MAME’s DNA. It gives us a space to question what we know, explore new ideas and then bring those discoveries back to the people who visit us every day. Ultimately, exceptional coffee should never feel complicated. Our role is to understand the complexity behind it, so that all you have to do is enjoy the cup.
