Konga AmederaroYirgacheffe, EthiopiaSmallholder Farmers Area: Amederaro, Konga, Kochere, Ethiopia Altitude: 1,800-2,100m Varietal: Heirloom Processing: Nitrogen Natural Roast Level Light roast ------------------------------ <Amederaro, Konga> One of the greatest attractions of Ethiopian coffee is its beautiful fragrance, vivid fruit-like flavors, and delicate sweetness. Yirgacheffe, where this coffee is produced, is one of the regions where these characteristic qualities of Ethiopian coffee can be fully appreciated. The Konga area is located at an elevation of 1,800 to 2,100 meters above sea level. Here, a style of coffee production known as “Garden Coffee” is common. Many smallholder farmers grow coffee around their homes and in their gardens. The cherries carefully cultivated by each small farmer are brought together to create a single lot. This coffee is produced by Project Origin, an Australia-based company that works with coffee producers around the world. Project Origin places a strong focus on exploring fermentation techniques, and categorizes its coffees according to their flavor profiles, using the colors of gemstones as inspiration. The name given to this lot is “Opal.” Opal is a gemstone that reflects a variety of colors depending on how the light hits its surface. Inspired by this quality, Project Origin uses the name “Opal” for coffees with rich and complex flavors that cannot be expressed by a single color. These coffees can have layers of fruit and floral characteristics, with different aspects emerging depending on the roast, brewing method, and drinking temperature. This diversity of expression is one of the defining characteristics of the Opal category. To create this Opal profile, this coffee uses a processing method called Nitrogen Natural. Only ripe red cherries that have reached a sugar content of 20–22° Brix are carefully selected by hand. For this lot, more than 90% of the cherries meet this high ripeness standard. The selected cherries are placed in sealed tanks, where nitrogen is introduced. The cherries then undergo a long, controlled anaerobic fermentation while yeast activity, temperature, and humidity are carefully monitored. After fermentation, the cherries are placed relatively thickly on raised drying beds. By intentionally slowing down the drying process, the producers aim to develop a fuller texture. The cherries are dried for approximately 25–30 days until they reach a moisture content of 10–12%. Even after drying, they are stored as whole dried cherries to help preserve their fruity character. Before export, the coffee goes through additional hand sorting and color sorting to further ensure quality. Even as green coffee, this lot had an expressive aroma reminiscent of tropical fruits. We wanted to highlight the complex character of the Opal profile, so we chose to roast it lightly. One of the challenges was determining exactly when to finish the roast. Small Ethiopian coffees can be difficult to read during roasting. The popping sounds of first crack can be subtle, and it can also be difficult to see the beans expand clearly. This is especially true with the Loring roaster we use at Philocoffea, which has a highly sealed roasting chamber, making the sound of first crack relatively quiet. For this coffee, we therefore paid close attention not only to the sound, but also to the changes in aroma throughout the roast. We repeatedly checked the aroma as the roast progressed, carefully looking for the right point to identify the beginning of first crack and the ideal moment to end the roast. Through this process, we adjusted the roast to bring out a vivid expression of the coffee’s fruit character. The aroma is already beautiful from the moment you grind the coffee. It has a combination of fermentation and fruit-like aromas, and sometimes even makes our staff look over and say, “Something about this coffee smells really good.” (laughs) We find that allowing the coffee to rest for more than two weeks brings out an even more complex aroma compared with drinking it immediately after roasting. During brewing, you may notice a complex fragrance reminiscent of grapes, chocolate, and melon. Being able to enjoy these aromas at each stage of the brewing process is one of the pleasures of making coffee at home. When you taste it, you may find a fruit-driven sweetness reminiscent of yellow peach and melon, followed by a long finish with hints of rosé wine and chocolate, accompanied by a subtle fermented character. There are also sweet and slightly tart impressions reminiscent of orange and Delaware grapes, with different fruit characteristics appearing throughout each sip. Just like its name, “OPAL,” this coffee can reveal different flavors and colors depending on how you brew it and who is drinking it. For one person, it might remind them of stone fruits. For another, citrus. Someone else might find chocolate, liqueur-like notes, or florals. Rather than searching for one “correct” flavor, we hope you will enjoy discovering the many different expressions of this coffee from different perspectives. Supporting all of these complex flavors is a smooth, syrupy mouthfeel with a pleasant viscosity. So, in addition to the bright and expressive flavors, we encourage you to pay attention to the soft texture and overall balance underneath them. Every time you drink it, you may discover something different—and before you know it, you might find yourself becoming completely fascinated by this coffee. This is a coffee that brings together the diversity of Ethiopian heirloom varieties, cultivated by smallholder farmers, with Project Origin’s modern approach to fermentation. We hope you enjoy the many expressions of this Opal coffee—bright and vibrant, yet with plenty of depth and complexity.

La FanyApaneca, El SalvadorRafael and Carmen da Silva Hoff with family Farm: La Fany Varietal: Heirloom Process: Washed. Ripe cherries are selectively hand-picked and delivered to the family’s mill, Beneficio San Pedro. At intake, the cherries are sorted to ensure optimal quality. Selected cherries are then pulped and thoroughly washed to remove mucilage. Parchment is then evenly laid to dry on raised beds. During this stage, workers rake parchment frequently to ensure even drying. Location: Ahuachapán, Santa Ana Elevation: 1600 meters above sea level Roast: Light to medium to present the natural characteristics of the coffee. Price transparency: The FOB price paid for this coffee was 6 US$/Ib . We are so excited to present La Fany Washed Heirloom for the first time. A small amount of Heirloom is harvested at the farm, alongside Bourbon, Caturra and Pacamara, among other varietals. Finca La Fany is a family inheritance for the Da Silva Family and dates back to the early 1900s. It was first established by Fabio Morán and then passed on through the generations from father to son. The beautiful farm is located on top of the Apaneca-Illamatepec Mountain Range, at 1,600 masl, 2 miles from the city of Apaneca. It received its name because of one of Rafael’s ancestors, called Fany. In the early 1990s, Raphael and Carmen had the opportunity to buy this great family heirloom from one of his aunts, and of course, they bought it. Originally, the farm was 100% Bourbon, but they have been experimenting with new varieties on a small scale. Still today, Bourbon remains the number one variety. They are very much committed to this farm as being the fifth generation in the family to have control over this land. Carmen told me that one of her proudest moments was in 2005 when La Fany Red Bourbon achieved the 4th place in the COE. It’s a farm that both me and Steve have spent a lot of time on and Steve has been buying this coffee since 2003 (yes he is that old) Since 2017, 13,000 new Pacamara trees were planted along with 40,000 new seedlings, composed of Red Bourbon, Orange Bourbon, Pacamara, Geisha, Yellow Icatu, and Yellow Caturra. We are now starting to see the fruits of these labours come through with exciting varietals and processing as the new generation (Rafael and Carmens sons) begin to get more involved in the farms. La Fany remains committed to supporting neighbouring communities by providing stable incomes and supplying fresh water to households. Beyond coffee production, Finca La Fany has placed strong emphasis on environmental stewardship by exploring ecological farming practices. One such initiative includes a vermiculture nursery that produces vermicompost, which is used to supplement other fertilisers and enhance soil health naturally. The future is bright for La Fany! Las DeliciasLas Delicias, NicaraguaErwin "Wingo" Jr Mierisch Farm: Las Delicias Varietal: Java Process: Natural Location: Lipululu in Jinotega region, Nicaragua Harvested: February 2026 Farm size: 20 manzanas (about 13 hectares) Elevation: 1450-1500 meters above sea level Price transparency: The FOB price paid for this coffee is This is the fresh crop from 2026 of Las Delicias Natural Java Las Delicias Natural Java in the region Jinotega in Nicaragua, is produced by the youngest producer, Erwin "Wingo" Jr Mierisch, with whom we got the absolute joy to work with. Still in his 30s, Erwin Jr is not a rising star; he is in the full swing of producing the best coffee there is out there. He is involved in quality with all of the farms from the Mierisch family, but Las Delicias is one that is his very first own farm. Wingo is making this elegant, floral coffee shine more and open up more every year. The skill and expertise is evident in the delicate and bright profile of their Javas (as well as numerous times they've won Nicaragua's "Cup of Excellence"), which gets more and more intense notes of citric and apricot every year. And with natural processing, as in this case, it has even more passion fruit and fudge. The Mierisch family are also very active in developing numerous social and environmental projects to improve the quality of life for the hundreds of workers they employ, local community and ecosystem. If any one producer could single handedly demonstrate just how significantly coffee can positively impact society it'd have to be them. Las Delicias Natural Java has a boozy aroma of sherry. This is a sweet and floral cup, with flavour notes of papaya, cacao and rum raisin. It has a medium body, with a juicy texture an fudge-like flavour in its finish. San CayetanoAhuachapán, Santa Ana, El SalvadorCarmen and Rafael Silva Hoff with family Farm: San Cayetano Varietal: Red Caturra Harvested: February 2025 Region: Ahuachapán, Santa Ana Process station: San Pedro owned by Rafael and Carmen Da Silva Hoff Process: Washed processed. The coffee is depulped the same day as harvest, soaked and dried on raised beds in three different levels to control the drying. The beans are turned over by hand continuously every day. For the washed process, the water the reservoir is used. Staff onsite also only turn the coffee by hand, log the moisture at different stages of the drying process, and have access to a great cupping lab with a well-trained crew in taste and routines. Elevation: 1450 meters above sea level Price Transparency : The FOB price we paid for this coffee was $4.62/lb San Cayetano Red Caturra is produced by the Rafael and Carmen Da Silva Hoff of El Salvador. While sourcing green coffee we meet a lot of hard-working producers, but none are as focused and work as many hours of the day as Carmen and Rafael Da Silva Hoff, who run six different farms and a processing mill to boot Rafael was first introduced to coffee growing when he was 21 years-old and got his first farm from his father. A few years later he met his wife Carmen. The couple got married in their young 30s and since then they are running their coffee business together. Today their two sons, Rafael Gerardo and Rodrigo, and their daughter Valeria are also involved in the business, making a it full family operation. In 2010, they decided to invest in their own mill, called San Pedro, not to make more money, but to gain full control of the full process of their coffee production. Today at San Pedro they not only process coffee from their own farms separated by lots and varietals, and but also for other producers in the area. In El Salvador, the biggest challenge is security for the people and the coffee fungus called leaf rust (roja). As in most places in El Salvador, the neighbouring farms to San Cayetano are suffering badly from leaf rust which can easily be transferred to the plants at San Cayetano by the wind. To combat this, Rafael and Carmen have built more windbreakers to shield their plants and are applying their self-produced organic fertilisers. Worka SakaroYirgacheffe, Ethiopia25 smallholder farmers Area: Wuri, Gedeb Worka Sakaro, Gedeo zone, Yirgacheffe Altitude: 1,900- 2,100m Varietal: Heirloom Processing: Washed Roast Level Light roast ------------------------------ <WURI> This coffee comes from Wuri Village in Worka Sakaro, Gedeb District, located in the southeastern part of the Gedeo Zone, east of Yirgacheffe, one of Ethiopia's most renowned coffee-producing regions. The Gedeo Zone is divided into six districts, one of which is Gedeb. Located approximately 434 km from the capital, Addis Ababa, this area was once quite remote, taking nearly eight hours to reach by car. However, road improvements in 2016 significantly reduced travel time to around three hours. Gedeb is blessed with an environment particularly well suited to coffee cultivation, with coffee trees covering approximately one-quarter of the land. The district consists of 16 administrative areas, including Worka Sakaro. Its well-drained slopes and lush vegetation provide excellent conditions for natural coffee cultivation. False banana trees, also known as enset, are commonly found growing around the coffee trees. Their fallen leaves naturally decompose into compost, enriching the soil with nitrogen and helping create a soft, fertile growing environment. The name "Worka" means "gold" in the local Gedeo language. According to local history, when a representative of Haile Selassie, Ethiopia's last emperor, visited the area, he was deeply impressed by the hospitality of the local people and began referring to it as the "Land of Gold." Since the 2019 harvest, the Worka Sakaro washing station has been owned by Ranger, a subsidiary of BNT, with the goal of producing even more exceptional Yirgacheffe coffees. The station employs skilled workers, provides fair compensation, and carefully manages every stage of processing and drying to maintain high quality. We introduced Wuri Washed last year, and we're delighted to bring it back again. Just like last year's lot, this coffee beautifully expresses the elegant character that makes Wuri so special. This year's green coffee had a slightly lower moisture content of around 9%. To avoid applying too much heat at the beginning, we started the roast with a gentler heat setting. We then gradually increased the heat while carefully monitoring the beans. After the first crack, we allowed approximately one minute of development before ending the roast. Rather than roasting too deeply, we focused on preserving Wuri's delicate, light character and beautiful floral aromas. In the cup, you'll find refreshing citrus and green apple notes, accompanied by a gentle, honey-like sweetness. Delicate floral and black tea aromas add another layer of complexity, creating an elegant and aromatic finish that lingers pleasantly after each sip. As the coffee cools, subtle notes of Muscat grape and stone fruits begin to emerge, revealing a different side of its character. We encourage you to take your time enjoying this coffee, from its light and refreshing flavors when hot to the developing sweetness and fruitiness as it cools. This is a beautifully light and floral Ethiopian washed coffee that leaves you feeling refreshed after every cup. It's a wonderful choice for your morning coffee, or whenever you need a little break to refresh your mind during a busy day. We hope you enjoy the elegant and refreshing character of Wuri Washed!
