Washed
Clean and bright. The fruit is removed before drying. Lets terroir speak clearly.
In washed processing, the coffee cherry's skin and fruit (mucilage) are mechanically removed from the bean before drying. What remains is the green bean sitting in parchment, washed clean with water, then dried on patios or raised beds.
The signature washed profile is clean, bright, and articulate. The flavors you taste come almost entirely from the bean itself — the variety, soil, altitude, and weather — not from the fruit.
Washed coffees are the easiest to read. If you're comparing two origins side by side, washed processing is the fairest comparison. Latin American and most East African specialty coffees are washed.
