Heyvis Sagastume

Description
From the roasterOnce again we are blessed to be friends with Angel Arturo Paz, our Honduran Hero. Late in the season he was able to secure a few special coffees for us, and this ultra-tiny lot is sure to disappear quickly. Angel works with many producers in his area, and this lot from Heyvis Sagastume is a special one. It went first to our subscribers in September, and our limited supply is now available to all. We love this coffee's classic, clean flavors of apricot and orange with soft floral notes. Grab a bag from our subscription roast, perfectly rested and ready to drink! Heyvis' tiny one-hectare farm is called Bosque Nublado, "Cloud Forest". Heyvis picked only ripe cherries, then hand sorted them at the farm before delivering to the wet mill. The mill depulps the cherries every afternoon, and then the parchment-coffee dry fermented for 18 hours. Afterward, the coffee is washed in four changes of water, then dried for 20 days with subsequent hand sorting. Process: Washed Variety: Geisha Region: Santa Bárbara, Honduras Make sure to check that the roast date you've selected is what you're looking for — if there is an "upcoming roast" for this coffee, the upcoming roast date is listed under the tasting notes at the top of this product page.
