Shade-Grown

Coffee under a canopy of native trees. Better for soil, birds, and slowly ripening cherries.

Shade-grown coffee is cultivated under a canopy of native or introduced trees, mimicking the forest environment where coffee evolved. The trees regulate temperature, slow cherry ripening, and provide habitat for birds and insects.

The trade-off is yield vs. ecosystem health: shade-grown farms produce less coffee per acre than sun-grown monocultures, but the cherries ripen more slowly, which (many argue) develops more complex sugars. The farm also supports biodiversity and sequesters carbon.

When you buy shade-grown, you're paying for slower production in exchange for ecosystem services. Look for "shade-grown" on the bag, or "bird-friendly" certifications.
