Roasting

Medium Roast

The American classic. Balanced, sweet, slightly less origin character than lighter roasts.

Medium roast is the most common American specialty roast level. The bean reaches just before "second crack" (the second audible pop, marking the start of roast-driven flavors). Color is medium brown, surface mostly dry with a hint of oil.

The cup is balanced and sweet: chocolate, nuts, caramel, mild acidity, and moderate body. Origin character is still present but starts to take a back seat to roast flavors.

This is the roast level most supermarket "specialty" coffee uses. It's approachable and crowd-pleasing, but the most distinctive origin notes get muted.
