Roasting

Medium-Dark Roast

Past second crack. Bittersweet chocolate, low acidity. The espresso workhorse.

Medium-dark roasts push into or just past second crack. The bean is dark brown, surface showing oil. This is the territory of Italian-style espresso blends.

The cup is bittersweet and low-acid: dark chocolate, roasted nuts, sometimes a hint of smoke or spice. Origin character is largely replaced by roast character.

This is the classic espresso roast. The low acidity and heavy body cut through milk beautifully. If your morning is a flat white, you're drinking medium-dark.
